As Katherine Sacks of Epicurious determined through a couple rounds of testing, three mashed bananas add moisture and depth of flavour that the bread is lacking, making it into a kind of “banana split bread”. In a move I fully support, Katherine also added a quarter cup of sugar because “no matter how ripe the bananas were, the bread lacked the level of sweetness that something called ice cream bread should have”.
This ups the ingredient count from two to four, which may make it a little less “Pin-able”, but it results in a tastier, more tender ice cream bread that’s actually worth eating.
