Avocados are amazing things — they’re delicious on their own, but they also have a lot of healthy fats, dietary fibres and vitamins. If you’re in the mood for something new and healthy for breakfast, this recipe combines the goodness of eggs ‘n’ avos into something truly delicious.
If you have an avocado that’s too firm to use for something else, slice it in half, remove the pit and carve out a little space in the centre. Crack an egg where the pit was and bake. In a few minutes, you’ll have a delicious, protein and vitamin-packed breakfast treat that’s rich enough to keep you going all morning.
The recipe itself is pretty simple, and comes to us thanks to the blog Babble. Just prep the avocado as described and put it in a 180 degree oven, or use a frying pan on medium heat and cover it for two to three minutes.
When the egg has set, add a little salt and pepper and you’re good to go. Avocados are used in all sorts of breakfast dishes, but this is a great example of using the avocado as a breakfast dish… and a pretty tasty one at that.

Use the excess avocado flesh – the bit you shell out to fit the egg in – as a spread for the accompanying toast, instead of butter.
