Make The Perfect Breakfast Egg Sandwich Using Just A Microwave

Most of us don’t have a lot of time in the morning to cook a luxurious breakfast, but this technique from Epicurious delivers one of the most delicious-looking egg sandwiches I’ve seen in minutes, and all you need is an egg, a microwave and some sandwich fixings (you know: bread, cheese and a few condiments).

The full recipe should be obvious from the video, but they added a little avocado and some hot sauce into the mix, neither of which should be strangers in your pantry or should add a ton of time to the preparation here. Speaking of preparation, it’s easy: Spray a microwave safe mixing bowl down with a little cooking spray, crack in two eggs, season with a little salt and pepper and a splash of water and microwave on high for 30 seconds. Stir things up, microwave for another 30 seconds and add some grated cheddar. Back into the microwave until the cheese is melted, and then slide that delicious, soft scrambled egg onto a muffin.

Top the whole thing with a couple of slices of avocado (or anything else you like on your egg sandwiches — maybe some deli meat or bacon or something?) and a little hot sauce, close it up and you’re good to go. You could even wrap it up in a little baking paper and cart it off to work with you to enjoy later, it’s up to you.
