Cook Eggs In Capsicum Or Onion Rings For A Simple, Clever Breakfast Treat

Capsicums and onion rings make ingenious ring moulds for eggs in the frying pan. Not only do they impart wonderful flavour to the egg and keep egg contained, they also look so beautiful.

The Apron Strings blog shows off this simple technique. Basically all you have to do is, put 1.25cm slices of the onion or capsicum into the lightly-oiled frying pan and crack an egg into the middle. You can even make eggs in avocado slices (don't forget you can also bake an egg in an avocado).

The ring moulds are a variation of the classic egg-in-a-hole concoction where you cook an egg in the middle of a slice of bread.

Craving even more egg hackery? Try cooking an egg in an orange over a fire.

    Thanks for the shout out!

Very cool idea. Love the capsicums (thanks for not calling them "peppers") a great way to brighten up sunday morning breakfast cook up...

OMG someone who knows what a capsicum is. 1e6 points there. This is a great idea - thanks!

I've tried this a few times now, and we love it, though i haven't got the hang of cooking it properly just yet, it tends to leak out from underneath the capsicum and/or doesn't cook all the way through so i have to flip it before ti burns on the bottom/dries out the yolk to much.
