Turn Ground Nuts Into Crispy, Delicious Breading

When you think of breading, you usually think of flour and bread or breadcrumbs, but ground nuts like almonds or pumpkin seeds can add the same crunch, fat and rich flavour. All you need to do is grind them up finely and toss them with a few other ingredients.

Grind up your nuts in your food processor (or even blender) until they’re at a fine consistency (just don’t over-process, or you’ll get nut butter.) You can use almost any type of nut for this, but almonds, pumpkin seeds and pine nuts go well with almost everything. You can use them on their own here, or mix them with breadcrumbs or panko to get a more familiar consistency. Best of all, if you’re watching your carb intake, this adds some fat and protein, and cuts down on the carbs.
