By adding a little pectinase to your juice, you'll remove any cloudiness and slightly improve the flavour. Just dump around 10 drops in a big bottle of orange juice, apple juice or even lemonade, and it will start looking crystal clear in no time. Pour the juice through a really fine filter (like a coffee filter) and you'll be ready to mix some great-looking cocktails.
