Want a yummy muffin without the effort of measuring and combining multiple ingredients? All you need is vanilla ice cream and self-rising flour.

Soften 500ml of vanilla ice cream and combine it with 250g of self-rising flour to get your vanilla muffin batter. Then you just need to bake at 220C for 20-25 minutes. (Use a toothpick to insert into the muffins. If it comes out clean, they’re done.) That’s all there is to it.
It may seem weird to turn ice cream into a bread product, but it contains milk, eggs and sugar, so it has the ingredients you need in addition to flour. In addition to muffins, ice cream can also make a tasty, sweet bread.

in fact, forget the flour, oven, and melting the ice cream….
It does not even have to be vanilla ice cream, you can use any flavor you like. I have had great results from chocolate and caramel ice cream

Did they rise okay? The ones in the article pic look a little flat, and I wasn’t sure how well the eggs in the ice cream would help with rising seeing as they’re usually cooked or pasteurised.
