Turn Ice Cream into Muffins with Just One Extra Ingredient

Want a yummy muffin without the effort of measuring and combining multiple ingredients? All you need is vanilla ice cream and self-rising flour.

Soften 500ml of vanilla ice cream and combine it with 250g of self-rising flour to get your vanilla muffin batter. Then you just need to bake at 220C for 20-25 minutes. (Use a toothpick to insert into the muffins. If it comes out clean, they're done.) That's all there is to it.

It may seem weird to turn ice cream into a bread product, but it contains milk, eggs and sugar, so it has the ingredients you need in addition to flour. In addition to muffins, ice cream can also make a tasty, sweet bread.


    Gonna try this with cookie dough ice cream....

    in fact, forget the flour, oven, and melting the ice cream....

    It does not even have to be vanilla ice cream, you can use any flavor you like. I have had great results from chocolate and caramel ice cream

        Did they rise okay? The ones in the article pic look a little flat, and I wasn't sure how well the eggs in the ice cream would help with rising seeing as they're usually cooked or pasteurised.
