Make A Single Vanilla Cupcake In Your Toaster Oven

Cupcakes are pretty great, and homemade cupcakes are even better, but sometimes you just want a single cupcake, not 12. For such times, The Kitchn has developed an easy cupcake-for-one recipe, and you don’t even need to break out your muffin tin.

Bonus: You probably already have all the ingredients. You’ll need butter, sugar, an egg white, vanilla, self-rising flour (you can make your own if you’re out) and a bit of full-cream milk. Mix it all together, and pour into a small ramekin lined with two cupcake liners. Bake in your toaster oven (or regular oven) at 175C for 18-20 minutes. Let cool and top with The Kitchn’s single serving of frosting (recipe in the link below).
