Freshly made mozzarella cheese is a delight, but it gets ruined if stored in the fridge. If you have store-bought or previously refrigerated mozzarella, all hope is not lost though. Serious Eats says you can rescue the cheese with a warm milk bath.

Refrigerating mozzarella cheese dries it out and can also make it rubbery. J. Kenji López-Alt explains that unrefrigerated mozzarella releases more of its moisture, giving it that impressive juiciness and lusciousness.
But fresh mozzarella only stores about a day on the counter, while it can last up to a week in the fridge or three months in the freezer. In a series of tests, López-Alt found a simple solution for turning refrigerated mozzarella back into its original, juicy form: soak the cheese in warm, salted milk for an hour, and it will taste just like new.
