Most folks are well aware that hummus is an excellent sandwich spread; it’s creamy, nutty, savoury, and friendly to almost every kind of diet. Those are all things I enjoy in a salad dressing, but hummus, straight from the tub, is a little too thick for drizzling on a pile of greens.

But transforming spreadable hummus into pourable dressing is very easy and, because hummus already has so much flavour, you only need a little water and lemon juice.

Just add a tablespoon of lemon juice to a quarter cup of hummus, whisk, and then whisk in enough water to get it to a pourable consistency. Season if you like — salt and pepper are fine, but try cumin, za’atar, or a little sumac — whisk once more, and get it on some greens.

  • Hummus,
1 x can of drained chic peas,
1/2 can of the liquid from that can,
    2 garlic,
    2 tbls tahini,
    1/2 tspn salt
    – in your blender til fine = perfect Hummus = perfect dressing for almost anything, especially on the salad.
