Figs always feel like summer’s last hurrah, produce-wise. Their season is short, but the joy they bring is everlasting. The Adriatic fig is so sweet, it prompted the cute grocer man to describe it as “nature’s jelly doughnut”, which was hyperbolic at best — where is the dough? — but gets the point across.

When combined with strong bourbon, and strong ginger beer, the strong sweetness is reeled in. It’s also extremely pretty. To make one yourself, you will need:

  • 60ml of bourbon
  • 2 fresh Adriatic figs
  • Your favourite ginger beer that is made with real ginger

Cut up the figs and chuck ‘em in a shaker with the bourbon. Muddle the figs into oblivion. Add ice, shake the bourbon until it’s well chilled, and strain into an ice-filled lowball through a fine mesh strainer. Add 60ml or so of ginger beer to fill ‘er up, and garnish with a pretty fig slice if you plan on Instagramming.
