“Vegetable icing” may not sound wildly appealing, but sweet potato puree actually makes a perfect base for a rich, decadent, chocolate icing.

To make this sweet treat, you only need two things: A can of the aforementioned sweet potato puree and 300g of finely chopped bittersweet chocolate. Simply bring the puree to a simmer, remove it from the heat and stir in your chocolate. Let it cool, stirring every once in a while until the mixture reaches the consistency of canned icing. Spread on Food52’s zucchini sheet cake (linked below) or any other cake that strikes your fancy. (I bet it’s not too bad off a spoon either.)
