Not everyone is a fan of cold soup, but if you are, you probably appreciate the rich, creamy texture of most chilled summer soups. Next time you whip up a batch, try avocado.

Toss some avocado into your blender next time you’re making a batch of cold soup and it will not only pump up the nutritional value of your meal, it will make that soup silkier and thicker. Blended up with yogurt and topped with a fresh tomato salsa, this no-cook soup is 100% refreshing and 100% slurp-able.
