This video from the Insider YouTube channel shares an impossible-to-mess-up ricotta cheese recipe from The Brooklyn Kitchen in Williamsburg, New York. Pour four cups of milk and one cup of heavy cream into a large pot, then add a pinch of salt and bring to a simmer.

Once it’s hot enough, turn off the heat, add some lemon juice (about a quarter-cup), stir it well, and let it sit for about five minutes. Now pour it all into a colander lined with cheese cloth and let it drain for 20 minutes to an hour over a bowl. You’ll be left with some creamy, tasty ricotta cheese you can use for whatever you like. And don’t forget to make use out of that leftover sour whey.
