Canned beans may not be the most glamorous food, but if you’re strapped for time (or cash) they’re a great base for a nutritious meal. If the thought of heating up a can for supper makes your palate want to die of boredom, do not fret: meal monotony can be easily prevented by stirring in a few flavour-packed additions.

Epicurious (linked below) has some great ideas for doctoring up sweet and smoky baked beans (roasted tomatoes with sausage and parsley is like an English breakfast in a bowl!) but there’s no need to limit yourself to one variety of canned legumes. White beans with cheddar, bread crumbs, and fresh herbs would be the ultimate in protein-packed comfort food, and black beans would be almost indulgent when paired with chorizo, adobo sauce, and cilantro. With tasty additions like these, you can take beans for “acceptable side” to “surprisingly tasty supper” in a matter of minutes.

Baked Beans cooked on a stove, with a little olive oil.
When it cools put it on toast with butter/olive oil and garnish with parmesan cheese.

Stir in a little Harissa
Fry an onion and some italian herbs, throw in a few slices of ham/bacon and fry for another minute or so. Add a diced tomato and the can of beans. Finish of with a good dose of worcestershire sauce and a teaspoon of brown sugar.
Put it on a couple of thickly sliced pieces of sourdough drizzled with a bit of olive oil or butter. High class beans!!!
