With three temperature zones, you can keep meat from overcooking, easily moving it from a searing heat to medium heat or an even cooler “safety zone.” Engel demonstrates how to create these zones on both a charcoal and gas BBQ.
Naturally, you should always be cautious with a summer BBQ, and remember: you’re generally OK with an electric or gas option, but charcoal is not allowed if there’s a total fire ban.
