The folks at First We Feast, who've been known to compile tutorials on basics like opening an avocado and finely chopping garlic, have put together an intermediate knife work primer, complete with more animated GIFs. In it, chef Chris Jaeckle of New York's all'onda demonstrates more challenging tasks, including how to julienne, the best way to prep capsicum and -- our favourite -- filetting a fish.
