In the Pixar movie Ratatouille, there’s a scene where Remy the rat takes a common “peasant dish” to a new level and wows a notorious food critic. This handy video from the ChefSteps YouTube channel shows you how to make that very same dish so you can wow your friends and family.

Ratatouille is simple and cheap to make, but if you use this fancy method of cooking the ingredients you’ll elevate your simple dish to “confit byaldi”. All you need are some tomatoes, zucchini, eggplant, onion, capsicum, garlic and a way to thinly slice all your vegetables. When you’re all done, you’ll have a meal that almost looks too good to eat.
