The word "salad" does not denote "healthiness" or a lack of kilojoules, but something about the word seems to imply a scarcity. Packing a salad for lunch seems to doom one to an afternoon of hunger pains or emergency vending machine runs, but no more. When I took a lunch to work, I was never the type of person who could prep it the morning of. This limited my workday lunches to things that wouldn't get gross sitting in the fridge overnight, so I assumed salads were pretty much out. This was incorrect.

Eggs are delicate little guys, and transporting them can be a nuisance. Luckily, Food 52 has a simple method for packing just a couple at a time, no extra equipment required. Just don't throw out your old cartons, and cut them up.
