Fancy pancakes at fancy brunch spots are (mostly) a scam. Pancakes have never been hard to make, and any number of add-ins can make them seem much more involved and refined than they are. (They are, however, still delicious, and you should make them in the comfort of your own home.)
Plain, seemingly boring cottage cheese is one of those elevating add-ins. It adds a nice creamy tang, with the little curds crisping up into tiny bits of fried cheese on the edges of the pancake. Pair with a simple strawberry sauce, and you have a blintz-like pancake that’s perfect for a lazy, decadent brunch.
