Get Your Cobbler Fix Without Turning On The Oven

Sweet summer fruits in buttery crusts are one of the many great gifts of the season, but turning on the oven is — obviously — the opposite of what anyone wants to be during when it’s hot as hell outside.

Luckily, you can make a little cobbler in under five minutes within the confines of your microwave. It works with pretty much any fruit, though I am partial to berries, which require no prep other than washing. To make your very own little bowl of sweet summer fruits with a warm, biscuity topping, you will need:

  • 1/2 cup of your favourite fruit, sliced if needed (I’m looking at you, stone fruits)
  • 1 tablespoon + 1 teaspoon white sugar
  • 1 teaspoon cornstarch
  • 1/4 teaspoon vanilla
  • 1/4 cup baking mix
  • 1 tablespoon of milk

Mix the fruit, one tablespoon of sugar, cornstarch and vanilla together in a mug or ramekin, keeping in mind that the fruit may bubble over, so the higher the walls of your vessel, the better.

In a separate little bowl, mix the baking mix, remaining sugar and milk together to form a dough, and plop the dough on top of the fruit.

Microwave for 90 seconds to two minutes, until the fruit starts to bubble.

Sprinkle with cinnamon, and serve with ice cream, whipped cream or just a very cold glass of milk.
