Freeze Bitters Into Ice Cubes For A Drink That Evolves

Bitters are basically the spices of the cocktail world, and just a few dashes or drops can round out a drink or give it a bit of depth. Dashing them right into the glass is fine (obviously), but by freezing some of the gentian-infused liquid into a big ol’ cube, you get a drink that gets a little more special as you drink it.

According to noted cocktail ice scholar, Camper English, “some people freeze bitters into their ice cubes for a delayed effect,” giving the drink a little boost of flavour as it dilutes. This is particularly good in simple, two-ingredient drinks that might become a little one-note as you enjoy them.

Classic Angostura bitters are great, but don’t sleep on orange, which feel a little more appropriate in the summer months. Just grab your favourite big cube ice tray, add four or five dashes to each well, fill with water, and freeze as usual. Add the flavorful cubes to cocktails, lemonade, or even cold brew coffee.
