Happy weekend, everyone, and welcome back to 3-Ingredient Happy Hour, the weekly drink column featuring super simple yet delicious libations. This week, we’re making a gorgeous, sparkling, juicy beverage to combat bad vibes.

I haven’t been feeling so well lately, which means I needed a happy-looking, fresh-tasting cocktail to lift my spirits. The grapefruit-forward, slightly bitter Italian Greyhound would have fit the bill, but we’ve already done that, and I had a cheerful can of sparkling rosé in my fridge just begging to be employed. Combining these three pink ingredients made for a very lively and balanced beverage that almost made me forget about my sad state. To make your own, you will need:
- 30ml Campari
- 30ml ruby red grapefruit juice (Feel free to play around with citrus fruits here – tangelos or blood oranges would work just fine!)
- Sparkling rosé to top (I would go with something slightly sweet here, to offset the bitterness of the Campari and grapefruit.)
Add the Campari and juice to a shaker filled with ice and shake until well chilled. (The shaker should become uncomfortably cold.) Strain into a flute or coupe and top with your favourite sparkling rosé. Sip to banish this last of your blues. (Alternatively, if you are in good health, toast to your good fortune.)
