Happy weekend, and welcome back to 3-Ingredient Happy Hour, the weekly drink column featuring super simple yet delicious libations. This week we're making a truly tropical, fresh-to-death pineapple daiquiri.
Actually, this is more than a shandy, as it has an extra ingredient to help it out. While I'm not against the mixing up a "traditional" recipe of equal parts beer and citrus soft drink (or lemonade), I find them to be a little sweet and a bit weak in the ABV department. To fix this very serious problem, I added a shot of vodka. I like plain ol' Reyka, but you could also use any of the Deep Eddy citrus (or cranberry) flavoured vodkas, which are surprisingly good.
Because this drink has no ice, it's important that all of your ingredients be chilled beforehand, so keep everything in a cooler if you'll be mixing them up al fresco. To make the fortified sipper, you will need:
- 30mL vodka
- 90mL cheap beer (You're going to be adding soft drink, so get something that is fairly flavourless.)
- 90mL citrus soft drink, any flavour you desire
Pour everything into a pint glass (or insulated tumbler) and gently stir. Sip and enjoy!
