As Laura Burgess at The Kitchn explains, a proper pouring of wine is important because wine glasses are designed to elevate the flavours and aromas of a wine by exposing it to the right amount of air. A glass that’s too full or too empty won’t do your wine justice. Here’s the pouring secret, according to Burgess:

Here’s the trick: Fill your glass only to the widest part of the bowl.

That’s it. That will ensure the best experience with your wine. The only time this isn’t true, notes Burgess, is when you’re having sparkling wine in a champagne flute. Those glasses are designed to be filled beyond the widest part of the bowl.
