I’m already a big fan of tahini in desserts, so this move makes sense to me. According to Tommy Werner, the sesame paste plays a role here similar to the one it plays in hummus, mixing in and providing a pleasing texture without distracting from the other ingredients. Just add in a tablespoon or two — perhaps into a date shake? — and enjoy the rich, creamy goodness tahini brings to the party.
