Break Out Of Your Scrambled Egg Rut With These International Recipes

There are many ways to scramble an egg, but it can still be easy to find yourself in a scrambled egg rut. To help you mix it up and keep it interesting, Food52 has compiled a whole bunch of tasty scramble-centric combos inspired by breakfasts from around the world.

  • Browned Flour Scrambled Eggs (from Turkey): Scramble two eggs into a roux made of butter and flour for a comforting, almost cream of wheat-like dish.
  • Sudanese Eggs with Pastrami and Tomatoes: Cook a chopped tomato in a little oil until it turns a “deeper shade of red”, then add four to six pieces of torn pastrami (or silverside) and cook for a few more minutes. Stir in some eggs that have been barely seasoned with salt and pepper and cook until they reach your favourite consistency.
  • Eggs With Garlicky Croutons and Spanish Chorizo: Revueltos are made by sauteing bread crumbs in garlic oil, then pouring them across eggs that have been scrambled in rendered chorizo fat and seasoned with paprika. It’s savoury, spicy and a great way to start your day.
