How To Grill A Whole Chicken To Perfection Using A Brick

Here’s an extremely simple way to cook a whole chicken on the grill – and it’s really delicious and juicy (we know because we ate two of these chickens after the filming was done.)

To pull this off, you’ll need a Weber BBQ, a brick and some foil. You can watch the short instructional video above or simply follow these steps.

  1. Cut out its spine.
  2. Break the sternum with the palm of your hand.
  3. Wrap a brick on tin foil.
  4. Place the chicken on the grill (with the coals at full blast), and the brick on top of the chicken.
  5. Leave it for about an hour (it depends on the chicken’s size) until golden. Note: Don’t flip the chicken. The brick will get so hot that it will cook the other side.

Extra bonus points: use this trick if you don’t have that much time).
