Make A Flavorful, Summery Salad By Treating Watermelon Like Poké

Watermelon sprinkled with a little sea salt is one of my favourite summery flavour combinations — and I thought I was super fancy when I paired it with feta – but this watermelon “pokeacute” from Bon Appetit takes the sweet + savoury factor to a whole new place.

The fresh watermelon is marinated in umami-packed ingredients like tahini, soy sauce, and sesame oil, along with a bit of lime, rice vinegar and agave, grilled until slightly caramelised, and then chilled for a few hours. The result is watermelon like you’ve never had it before, with deep, intense flavours that are substantial, yet refreshing.

Plus, the dish just happens to be vegan, which means it can be enjoyed by anyone all summer long.
