Learn How To Brew Your Own Mead At Home

Mead is a sweet, alcoholic beverage made from fermented honey and water that has a long history and is sure to please most palates. You can find it in stores, or you can make a big batch of it at home for cheap.

In this video from the Make: YouTube channel, Jim Austin shares a simple mead recipe that takes a long time to brew, but is a great starting point for first brewers. Start by pre-warming the honey to about 37.8 degrees Celsius in a low-temp oven or a warm water bath, and while it warms make certain that all your equipment is bacteria-free using the methods described in the video. Now mix 7kg of water that’s been heated to 48.9 degrees Celsius with 3.2kg of the pre-warmed honey in a large stockpot. Stir until the honey has dissolved over gentle heat.

Add eight grams of acid blend, seven grams of yeast nutrient, and five grams of diammonium phosphate (DAP) to the pot and stir until dissolved. Once it’s all mixed, pour the mixture into a large glass carboy, then add two and a half campden tablets to sanitise the mixture from wild yeast and bacteria. Put the cap on the carboy, then set it somewhere dark and cool for 24 hours. After that, you add the yeast and do some waiting. In a few weeks, you’ll have a fully fermented, delicious mead that you can bottle and share with family and friends.
