This Brioche Dough Is The Starting Point For Customisable Breakfast Rolls

I love a breakfast pastry, but it has to be a savoury breakfast pastry. Making my own has always seemed a little too “involved”, but this brioche recipe from Extra Crispy is not only super easy, it’s super customisable.

Click the link below for three great flavour suggestions (such as saag paneer), but the basic dough can be filled with pretty much anything you can imagine. Just stir 2 1/4 teaspoons of instant yeast into 2/3 cup of warm milk and a pinch of sugar. Set that aside and whisk together 3 1/4 cups of plain flour with 1 1/2 teaspoons of salt. Make a well in the centre of the flour, pour in the yeast mixture, crack in two eggs and add 5 1/2 tablespoons of cold, cubed butter. From there, it’s just a bit of kneading and resting, and then you’re ready to add in your flavourings of choice.

Start with the excellent suggestions from Extra Crispy, but don’t be afraid to put your own spin on things. Personally, I’ll probably just add a lot of cheese to mine, because cheese is very good.
