If you don't want Apple Pay accessible from the lock screen for security purposes or you're like me and you never actually mean to pull up Apple Pay, it's easy to disable. Head to Settings > Wallet & Apple Pay and set "Double-Click the Home Button" to Off. Now, double-clicking the Home button on the lock screen will do absolutely nothing.
