Making pie — or at least making pie crusts — can be pretty intimidating if you've never baked before, enough that you might just run out and buy a premade crust. You don't have to: You can get a super flaky pie crust with four ingredients and no special equipment, and Bon Appetit shows us how. The video above tells the tale, but the process only takes 10 minutes, and ingredients list is easy enough: One cup plus two tablespoons of plain flour, one teaspoon of granulated sugar, half a teaspoon of salt and 113g cold butter. Toss the dry ingredients together, then cut up the butter and toss the pieces with the flour mixture. Spread it all out onto a cookie sheet or countertop, grab a rolling pin (or something you can use to roll the dough out with) and get to work. It will take a few minutes, but it will come together nicely, and in the video they even use huge chunks of butter in the process.
You'll also need three tablespoons of ice water after you have a kind of combination of sheets of floured butter and your flour mixture. Take your mixture, transfer it to a bowl and then drizzle the ice water over it. Mix some more with your hands, then roll it all out until it comes together. They suggest using a bench scraper for this (which we absolutely love) to make it much easier to work. When you're done and it's holding together, you'll have an amazingly flaky crust once it bakes up.
