Turn Leftover Pasta Into A Filling Breakfast Frittata

If you have some leftover pasta, or made pasta but prepared too much for your dish, turn it into an easy breakfast by throwing it into a frittata. Plain pasta or pasta with sauce or other ingredients mixed in, it’s all fair game.

The pasta itself will make the frittata more filling, while the frittata transforms the pasta into a completely new, heartier meal than it would be with just the eggs. Make your frittata as you normally would, then pour the egg mixture over the pasta and bake. Pastas that are plain, have a cream sauce, or just olive oil and vegetables will work best in a simple frittata, but you can give a tomato sauced pasta a try and see how it sets. Since both dishes scale well, it’s a perfect pairing if you’re feeding a large group, or prepping breakfast or brunch for a crowd. Pasta for dinner, then in a breakfast frittata the next day.
