You’ve probably had chicken piccata, but that delicious, punchy sauce can add a jolt of flavour to any protein that pairs well with white wine and lemon, including vegetarian options like tofu or white beans.

Cook your chosen protein (click the link below for suggested preparations), and make a pan sauce by sauteing some shallots or onion in a tablespoon or two of butter. Add some stock. Food 52 recommends 1/3 cup for two people, but there’s no need to be exact; extra sauce is not a problem. Add the juice of a lemon, a healthy glug of wine, and as many capers as you desire. Let it all simmer while you prepare your starch (pasta, potatoes, it’s all good).
Taste your sauce and adjust if needed. Add more wine, lemon, stock, or salt and pepper if it needs it. Once it tastes perfect, add you protein back in and let everyone get to know each other for a couple of minutes. Throw on some fresh parsley and serve.
