Give Your Grains A Creamy Flavour Boost By Cooking Them In Coconut Milk

Rice and other grains are fine when cooked in water, but adding another liquid to the mix can give them an extra tasty boost. Stock is an obvious choice, but fruit juice, wine and coconut milk are all delicious contenders.

The Kitchn (linked below) has a whole bunch of suggestions on how to think outside the stock box, but my personal favourite grain booster is coconut milk. For creamy, dreamy coconut rice, use a ratio of 1 1/4 cup water to 1/2 cup canned coconut milk for every cup of rice. For quinoa, a half-and-half ratio of each liquid is the way to go. Serve with some sautéed vegetables and maybe a grilled protein, and dinner is served.
