Make A Savoury, Vegan-Friendly Risotto With Miso Paste Instead Of Parmesan

Risotto is a tough dish to perfect, but if you’re vegan or cooking for someone who is, things get even more complicated. Fortunately, you can whip up some delicious, savoury risotto by substituting miso paste for Parmesan cheese.

Parmesan (and sometimes mozzarella) cheese is a primary ingredient for most risotto’s, but J. Kenji López-Alt has an easy workaround for a more savoury dish that’s also 100% vegan-friendly. Instead of throwing in a few tablespoons of grated cheese, heft in about a quarter cup of miso paste. Of course, you don’t have to be vegan to follow López-Alt’s recommendation.
