Make A Foamy, Dairy-Free ‘Latte’ With Xanthan Gum

If you’d like to sip a smooth latte, but don’t want any dairy or dairy alternatives, just add a little xanthan gum.

This video from the ChefSteps YouTube channel demonstrates a simple way to make a quick latte at home sans the milk. Brew a pot of coffee like you normally would, pour it into a blender, and add a tiny bit of xanthan gum before blending. Xanthan gum is a fairly common thickening agent in candies and foods, including sauces and salad dressings. Here it interacts with the water to thicken up the coffee and give it that smooth, creamy texture you’d get with a real latte. You might even want to try blending in other things like cinnamon or sugar to add some extra flavour.
