Grill Juicy, Flavorful Chicken Cutlets In Five Minutes

Busy weeknights often demand a quick healthy meal you can throw together that doesn’t take all night to cook. J. Kenji Lopez-Alt of Serious Eats has a three part method you can use to cook flavour-packed chicken cutlets in just a few minutes.

First, create a tasty marinade. It will add flavour to your chicken even if you just coat the cutlets with it. Go for intense flavours like herbs and aromatics (garlic, shallots) combined with black pepper and olive oil. Round things out with a hit of acid from lemon juice. Save half of the marinade for a delicious sauce to top your chicken with after grilling.

Next, cut your chicken breasts into cutlets. Since your ultimate goal is to be able to grill your chicken in just a few minutes, this will drastically reduce your cooking time. Slice them in half (lengthwise, along the flat) and pound them flat. Dip your cutlets in the marinade, make sure to coat each side with pieces of the herbs and aromatics so their flavour is really cooked onto the chicken.

With such thin cutlets, you’ll need to take care while grilling to keep them juicy. Lay one side of each cutlet on the grill (use high heat) until the piece is cooked almost all the way through. Then flip to finish cooking on the second side for only a few seconds. You’ll end up with a super flavorful, browned first side and a juicy, tender second side in just a few minutes.
