Make ‘Almost’ Pickles In Just 10 Minutes

Ever reached for some pickles only to find out there were none left? If you have a cucumber, you can get to something close in just 10 minutes.

All you need is a cucumber, some salt and sugar, and a bowl. For a medium-sized cucumber, toss the slices in a bowl with about a tablespoon of sugar and 1.5 teaspoons of kosher salt (or a teaspoon if you’re using table salt). You can also add other spices, garlic or pepper if you like. Mix the slices around and let them sit for about 10 minutes. The salt and sugar draw the moisture from the cucumber, which then marinates in sweet, salty liquid.

I tried making these myself last night. No, they don’t have the vinegary punch of a fully-brined pickle. But they get pretty close in texture and the taste is pleasant enough that you won’t mind it on a sandwich or burger, especially if you add vinegar or mustard to it to get some of that acidity back.
