J. Kenji Lopez-Alt, writing at Serious Eats, suggests kale, young collard greens, celery, carrots, lightly blanched cauliflower, jicama, dried berries and nuts. He also mentions the most important factors to consider for hearty, make-ahead salads:

  • Make the salad a meal with bold flavours that bring out the best in the ingredients while satisfying your palette.
  • Have at least one ingredient (like beans) that makes the dish heartier and more fulfilling as a meal rather than a side.
  • Drain your salad after you’ve let it rest in the seasoning. If your salad’s seasoning contains salt, then the salt will pull some liquid from the veggies. You want to drain this liquid before chowing down.
