Make Easier Crepes With Flour Tortillas

Crepes are delicious, delicate and difficult to make. Instead of making the crepe from scratch using flour, use a tortilla.

Kenny Shopsin, author of Eat Me: The Food and Philosophy of Kenny Shopsin, suggests using a fresh tortilla instead of the traditional flour recipe for an easier made crepe. Warm some egg and butter to room temperature, and whisk eggs, cream and maple syrup into a large bowl. Soak some fresh tortillas in the egg mixture you just created, and melt some butter in a pan so you can cook the tortilla. Once the butter is slightly bubbly in the pan, cook and flip the tortilla until lightly brown on both sides, then fold to satisfaction.

If you do this, use fresh tortillas because they absorb the egg mixture better. In the end, not only will you have a quick and easy crepe recipe, but you also won’t have to deal with it falling apart, or go the extra lengths of layering parchment paper to store it. Of course this won’t taste exactly like a traditional crepe, but it will be close enough to do the trick when you want a quick and easy fix, and it’s just as easy to dress up for more flavour.
