Chocolate truffles cost a lot, but you can make them yourself easily with just two ingredients. All you need is two and a half boxes of melting chocolate and a container of cream cheese.

This recipe, from Philadelphia Cream Cheese, is very simple:
- Whip the cream cheese
- Melt half the chocolate
- Add the chocolate to the cream cheese and mix well
- Use a spoon (or something similar) and drop “balls” of mixture onto wax paper
- Refrigerate the “balls” for about an hour, or until they are firm to hold their shape in melted chocolate. (Before next step, I usually roll better balls!
- Melt the other half of the chocolate, and dip each ball into the chocolate mixture (you can add a little shortening to the chocolate while melting, to make them look shinier if you wish).
You can decorate them with sprinkles for added flair. Either way, you’ve made a tasty treat without much effort.

I have a 10kg container of chocolate…do I *really* need to use half of it with just a container of cream cheese?
Yes. Yes you do.
😐 Not so sure about using cream cheese to make truffles though. I’ve found, when making chocolate cheesecake, the sourness of the cream cheese doesn’t quite mix well with the chocolate.
