Repair Cracked Cheesecakes With Sour Cream


If your homemade cheesecake comes out of the oven with a cracked surface, you can always add a fruit topping. But if you want to display a smooth even cheesecake, you can fill in the cracks with a sour cream mixture and bake it for a few minutes.

Instructional site eHow says that you can make a paste to fill in the cracks by mixing sour cream, sugar and vanilla extract. Whisk that together for a minute or so and then spread the mixture over the top of your cheesecake, pushing the mixture down into the cracks.

If you’ve just baked your cheesecake, put it back in the preheated oven for 10 minutes. If the cake is chilled or room temperature bake it for 14 minutes.
