Culinary weblog Coleen's Recipes shares how to make mini-omelettes in your muffin/cupcake pans. Preheat your oven 190°C, spray the pan with your cooking spray of choice. Whisk eggs, milk, oil, baking powder and salt and pepper together. Divide whatever chopped meat and vegetable toppings into the sprayed cupcake wells, fill each well with the egg mixture add some shredded cheese on top if you like, and then bake for around 20 minutes.
