Use Leftover Herbs To Make Infused Syrups


We’ve shown you how you can freeze herbs in ice for infused cold drinks. If you want another option for your latest herb harvest, try infusing them in simple syrups to give everything from iced tea and lemonade to cocktails and mocktails a tasty, flavourful twist.

Simple syrup is incredibly easy to make and worth keeping around for a quick liquid sweetener for anything from hot coffee to cold iced tea. It’s even better with a little mint thrown in, or perhaps some lemongrass (shown above). The folks over at The Kitchn have a few suggestions, but we can’t think of too many herbs that would be a bad idea to infuse with a little sugar — even basil and sage could add some great flavour to the right kind of drink, especially if you’re thinking about flexing your bartending skills and making some original cocktails at home.
