Layer Herbs In Sea Salt To Preserve Their Taste And Appearance

Just because the weather’s not warm enough, it doesn’t mean you can’t enjoy fresh herbs from your garden or the market next season or all year round. Of the several ways to preserve herbs, one interesting method is layering with sea salt.Photo via Christine.

The registered dieticians at HealthCastle offer these instructions:

Simply layer sea salt and herbs in a glass jar until the jar is full and the herbs are covered. When you’re ready to use your herbs, remove the leaves from the salt and toss them in your recipes.

Besides best preserving the herbs’ appearance, this method may also flavour the sea salt with the herbal flavour, so you could use the salt to enhance your recipes as well.

If you’d rather dry or freeze your hebs to preserve them, HealthCastle has instructions for those methods as well.
