Use iTunes Search For Easier iPhone And iPad App Organisation

iPhone/iPod touch/iPad: Rearranging apps is much easier in iTunes on your computer than it is on your iOS device itself. Macworld offers a little-known trick for even simpler app organisation: use the iTunes search box to quickly find the apps to drag around.

After connecting your iPhone or other iOS device to your computer, click on its name in the Devices list, then the Apps tab. The search box will now say “search apps”.

Start typing in the first few letters of an app you want to move to a different home screen or folder and iTunes will filter your apps list to show only those apps. This is especially useful if you have a lot of apps in a series, such as Angry Birds, Angry Birds Rio, Angry Bird Seasons, etc, and is easier than scrolling through all the screens to find the specific app you want to rearrange.
