Most of us are familiar with the fairy floss on offer at fetes and amusement parks, but fewer people know that you can make fairly floss by hand in an awesome fusion of hands-on kitchen fun and science.

Cooking Issues, a culinary blog, shares a great how-to video and interesting background information about hand pulled fairly floss (or cotton candy, as Americans generally refer to it). Sugar, when heated to the right temperature, becomes extremely ductile and can be stretched again and again. How many times? With just a simple hand pulled technique 14 pulls can yield over 16,000 ultra-fine strands of delicious handmade fairy floss.
The process is extremely simple and requires only some basic kitchen supplies like a pot, sugar, corn syrup, a thermometer, cornstarch and a baking sheet. Check out the video above to see the process, practically culinary magic, in action.
