Posted by Kevin Purdy at 2:30 AM on December 20, 2007

Food author and recipe minimalist Mark Bittman follows up on his summer-time list of 101 10-minute meals with a list of 101 appetizers that take 20 minutes or less to whip up. A few of them fudge the time requirements a bit, and a good number require having pre-made ingredients on hand, but the vast majority can be whipped up quickly with only one or two items added to your grocery list. What last-minute appetisers do you keep in your bag of tricks for unexpected guests or holiday entertaining? Open-source your recipes in the comments.

"... a list of 101 appetizers that take 20 minutes or less to whip up."
~11 seconds per appetizer ... that's what I call fast! Unless what you really mean 20min each, then that's just plain s.l.o.w.

a wheel of Camembert, some nice stilson with dried apricots or cranberries, a couple of other hard cheeses and substrate of some sort (baguette works best)
put it on a nice board with knives so guests can help themselves.
oh, and chunked parmesan with balsamic vinegar drizzled over
appetizers in under 5 minutes

Thinly-sliced baguette topped with just about anything covered with cheese and broiled. My favorites are apple slices with goat cheese, pesto with Asiago, and fresh spinach and sliced tomato with Parmesan.
Also, a quick dip is 4 oz cream cheese, 1/2 cup plain yogurt (or sour cream or mayo), plus some sort of favoring (taco seasoning, roasted red peppers, fresh herbs, sundried tomatoes in oil, a dried herb blend ... whatever you have on hand), blended well. Serve with veggies, cracker, tortilla chips or whatever seems to fit.
Meatballs with different dips (from Trader Joes, kept in the freezer).
Steamed dumplings (again, kept in the freezer, but from the Asian market).

Open bag of Doritos. Place on table (gently!). Position so open end is facing out.
Time: 30 seconds. (It takes times to open a bag of chips neatly.)

Something my mom use to make when we were kids, that I still make for my friends as a trashy appetizer:
1 can of fridge biscuits (regular size, not Pillsbury Grands)
5 slices of bologna (thick-slice)
5 slices of American cheese
Take two biscuits and moosh them together; roll them out to be just a little bit bigger than the piece of bologna. Lay a piece of bologna down, and then a piece of cheese. Roll up into a log, and then cut the log into slices. You should see little pinwheels.
Bake at 350 degrees (F) for about 10-15, until toasty brown. Super yum.

Easiest appetizer in the world and tasty too -- take a block of cream cheese. Pour jalapeno jelly over it. Eat with crackers. It's not gourmet, but it is freaking delicious.

Go to Costco
Go to the Frozen Appetizer section
Pick your favorite
Heat and enjoy
@TSS: another variation:
block of cream cheese
mix imitation crab meat and cocktail sauce
Pour mix over cream cheese
Eat with crackers
Again, not gourmet, but freaking delicious
